Walnut, peach and blueberry bread

What you’ll need  

  • 300g self raising flour

  • 1/2 tsp baking powder

  • 1 cup of brown sugar

  • 2 free range eggs, lightly whisked

  • 125ml of vege oil

  • 125ml of butter milk

  • 35g of walnuts

  • 2 large OVER RIPE bananas

  • 1 peach finely chopped

  • 1 punnet of fresh blue berries

What you’ll need to do

  1. Preheat your oven to 180° grease a loaf pan and line with baking paper allowing the sides to over hang

  2. In a bowl, combine the flour, baking powder and sugar in a bowl. In a seperate bowl, combine the egg, butter milk, oil and banana and mix together mashing up the banana.

3. Add the wet mixture to the dry mixture, then add in the peach, blueberries and walnuts.

4. Spoon the mixture into the greased baking tray, and bake for 45-50 minutes -
poke a skewer in and if it comes out clean- your bread is ready.

5. YUM. Cut into slices and serve. Great breakfast snack for on the go.
