Poached salmon with a apple walnut salad

A yummy post WOD training dinner or lunch. This salmon is packed full of flavours, that will want you wanting more. The secret is not to over cook the salmon. Delish!

What you’ll need;

  • 2 pieces of salmon (I prefer the tails)

  • 1 cup or fish stock

  • 1 lemongrass stem, bashed and chopped

  • 2 tbs of fennel seeds

  • 1 apple cored and finely chopped

  • 1 fennel bulb - optional - I didn’t use it!

  • 1/2 cup of walnuts

  • 1 handful of finally chopped parsley

The dressing

  • 1 monster tablespoon of seeded mustard

  • 1/2 a lemon juiced

  • Splash of olive oil

  • A squeeze of honey

What to do.

  1. First thing is get the salmon into a steaming basket, lay with baking paper to avoid sticking and poke some holes in to let the flavours come through.

  2. Get a pot on and add the fish stock, fennel seeds and lemon grass, bring to a soft boil and add the steaming basket (with your salmon in it.) cook for 8-10 minutes *be sure to under cook rather then overcook.

  3. In a seperate bowl, add the thinly chopped apple, parsley, walnuts (and fennel if you like it)

  4. Mix all the salad dressing ingredients in a jar or a bowl and coat half of the apple mixture in it, saving the other half. At this stage your salmon will be close to ready. You can check by pulling it slightly apart. Once it is- set aside.

  5. Get out a plate or bowl and add the salad to the bowl, pull apart the salmon over the top & add the remaining dressing! YUM
