Beef Skillet

What you need:

* Garlic - as much or as little as you like

* 2x  diced Onion

* 1x Capsicum

* 1KG Ground beef - I use 4 star

* taco seasoning

* Tinned Tomato

* Tinned Black beans drained & rinsed - I use tinned, you can use fresh. 

* 2 cups of Jasmine rice

* 1 & half cup of any stock (not fish)

* Shredded cheese - again, as much or as little as you like. I use a Parmesan/ tasty blend.

* Fresh, washed, chopped Coriander

* Jalapeños 

What to do!

This recipe only requires one pan and one pan only! I love to bulk cook this and have my lunches ready to go. Prep time is about 10 minutes, and cook time is a further 15-20.

1. Partially cook the onion, capsicum, and garlic in some olive oil - only soften, no need to cook them all the way. Then take out and set aside.

2. Add the beef and cook until brown, then add the taco seasoning and cook the beef all the way through. add the onions and capsicums back in and mix together.

3. Add the tinned tomato, rice, beans and stock and crank the heat to a boil. Then, turn the burner down to low and cover it. Let simmer for 15-20 minutes or until the rice has softened. 

4. Add the cheese and mix through, and top with fresh coriander and jalapeños! This is perfect for meal prep! YUM!
