The perfect high protein pasta bake


I made this on Friday night before we had the Hyrox comp in Sydney over the weekend. It would be perfect before any CrossFit comp! Also great for meal prepped lunches before training and post training.

Here’s what you need;
- 1kg of lean beef mince
- 1 packet of high protein pasta (from coles)
- Tinned tomatoes
- Tomato paste
- Cheese
- Ricotta
- Whole bag of spinach
- 1 onion
- Garlic
- Splash of red wine
- Salt and pepper

Steps to making -

1. Firstly, get a pot of water on the boil, add some salt and a bit of oil to season the pasta and help prevent them from sticking, then preheat your oven.

2. In a pan, bring to a medium heat, add some oil and sauté the onions, add your garlic and tomato paste and cook out for a few minutes. Next add a splash of red wine and deglaze the pan.

3. Once the alcohol has reduced , add in your mince and cook until brown. Add the tinned tomatoes and I added in half a can of stock, then turn the pan down to simmering and cook out for a further 15-20 minutes.

4. By this time your water should be boiling- add in your pasta & set the timer. Add in the whole packet of spinach and let it wilt down.

5. Season and taste, then add in your cooked pasta & mix through. Then add it to a baking dish. Add ricotta cheese in blobs throughout the bake and sprinkle with some cheese and bake for a further 20-25 minutes! Easy as that!
