Healthy on the go breaky muffins

Super easy, quick, tasty and nutritious breaky for those who are busy! This recipe makes 12 of them! Enjoy

What you’ll need;

- 12 eggs
- Few sprigs of thyme
- 200g Bacon chopped
- 12 Cherry tomato’s halved
- 4 stems of Spring onions
- 200g Buffalo ricotta
- 200g Tasty cheese
- Salt & pepper
- Non stick muffin tin

Simple steps to make;

1. Pre heat your oven to 180°

2. Spray your muffin tins with oil

3. In a pan, cook bacon, half of the spring onions, then add the cherry tomatoes and cook for 5 minutes until bacon starts to get crispy.

4. Transfer bacon, onions & tomatoes to the greased up muffin tins & add ricotta.

5. Whisk together all 12 eggs, season & add the fresh thyme then pour into muffin tin.

6. Top with rest of spring onions & tasty cheese and bake for 25 minutes at 180°

7. YUM! Enjoy, I cook up a batch of these and I’m good for breakfast in the mornings! Enjoy!
